Pascal Jolivet owns some of the finest vineyards in the Loire (they are surrounded by forest, which creates a unique micro climate) and the grapes for this special wine are carefully selected from the very best plots from across his vineyards in Sancerre, which makes this wine extra special. Interestingly after fermentation Pascal keeps the wine maturing on its lees (yeast) for a whole 12 months. This adds a lovely rich biscuity complexity to the wine, which complements the fresh lemon and apple flavours perfectly.
This is an opulent refreshing wine, bringing back the original greatness of Sauvignon Blanc. This is for those who prefer a less zingy gooseberry style of Sauvignon Blanc than has been promoted by New Zealand recently. The wine is not filtered before bottling in order to keep its rich complexity so decanting may be beneficial. Fresh grilled fish would be sensational with the Sauvage, although sushi would also be an interesting option.
