Pouilly on the east bank of the Loire river is completely surrounded by forest. This creates a micro climate for the grapes and as a result, Pouilly-Fume wines tend to have a bit more body and concentration than Sancerre wines. It is said that the name Pouilly-Fume derives from the early morning mists which hang over the river, making it look as if the river is 'smoking.' After fermentation Pascal matures the wine for 12 months on its lees, giving a subtle, rich complexity to the wine before bottling.
