Great Cabernet Sauvignon never goes out of fashion. This is a wonderful example, emerging from the terra rosa soils of Coonawara, where Mike and Brent Wetherall carefully tend to the vines.This wine has it all; it is complex and structured but still incredibly approachable. Very elegant and not at all over-the-top or too powerful, as some Aussie wines can be. The slightly cooler climate of Coonawara makes the wine very aromatic with more complex tannins and rich colour. The grape ripens more slowly so the flavours have more time to develop, whilst the skins are also a bit thicker, so take a bit longer to breakdown. This creates a punchy wine, with deep blackcurrant flavours, mint, tobacco and spices with a lovely, lingering finish.
