Amarone della Valpolicella is made using an intriguing method: the very best grape bunches are carefully selected and hand-picked and are then laid out in boxes of 5-6 kg to be naturally dried in the fruttaio (a large room with natural air circulation) for four months. This concentrates the flavour and sugars in the grapes, creating very rich, full flavoured concentrated wines with a higher alcohol content. After the ‘appasimento’ (drying process), the grapes are gently pressed the following January. The wine is then matured in Slovenian Oak for two and a half years and spend a year in bottle.
The grapes for this wine come from Tommassi’s prime, small 5 hectare vineyard Ca Florian. Only 7,000 bottles were made of this, their top wine. Savour it!
As a result of this intricate and labour intensive method of making wine, the wines are not only of the highest quality but also truly unique, deep and intense on the nose with aromas of dried cherries, baked plums and spiced fruit compote. The full-bodied palate doles out ripe black cherry, raisin, white pepper and mocha accompanied by round, chewy tannins and dark chocolate. It closes on a liquorice note.
